"Aux Prés", the legendary Saint Germain des Prés bistro
Ow renamed Aux Prés, number 27, Rue du Dragon is something of a legendary establishment in Saint Germain des Prés. This renowned bistro still continues to attract actors, musicians, politicians and the ‘beautiful people’ just as it has since it opened in the 1950s and Le Tout-Paris graced the leather-upholstered seating. When the opportunity presented itself, the noted French chef Cyril Lignac did not hesitate to take charge of the bistro’s second coming.
Sensitive to the history and the spirit of the place, the chef has preserved the unique atmosphere and authenticity that form its character. Open to the world, its bistronomic cuisine gives pride of place to the beautiful and delicious produce and ingredients sourced from French and foreign lands. Depending on seasonal availability, the offerings are always pleasing. Such delights as spicy crispy prawns, hearts of romaine lettuce with sesame, veal sweetbreads with sweet and sour condiments, carrots, brie de Meaux, hazelnut salad, beef rib, and vanilla profiteroles with chocolate and caramelised peanuts help to bring this essential Parisian bistro up to date.
