Winner of the Gault & Millau Endowment for Young Talents with his restaurant Tomy & Co, which opened last year in the 7th arrondissement of Paris, the young chef Tomy Gousset is making his mark on the early spring with this new place in the heart of the Latin Quarter. And it’s right in front of the Hotel Monge! An uninhibited cuisine, fully attuned to pleasure and sharing, influenced by the popular cuisine of Asia, but also offering a tip of the chef’s hat to Italy and the United States, this is Tomy Gousset’s ambition for his new restaurant. With avocado & red radish crostini, parmesan cheese aged for 36 months, fish & chips with hake & vegetable chips, tartar sauce, and mango ice cream & cottage cheese tapioca, it's a journey full of flavours that begins around the concrete host table in the centre of the room or on a high bar at the counter. The menu with its cosmopolitan influences will change with the seasons and in accordance with the harvests of the organic vegetable garden of the Château de Courances, from which much of Tomy’s produce is sourced. Raw nature gives the tempo to the dishes as it does to the décor of the place. Covered with wooden crates, the walls set the scene for this authentic place, inspired by the organic restaurants of the Brooklyn district of New York. A trip around the world without setting foot outside Paris!
